  1. I put these in my air fryer to bake, and they turned out great. My husband said he liked them much better than sweet potato fries.

  2. I made these this evening. I didn’t have thyme so used oregano and rosemary. It came out crispy and delicious! Thank you for sharing this!

  3. Would cornstarch (corn flour if you’re in the U.K.) work instead of tapioca flour to crisp them up? I’ve used it to coat tofu before for the same reason and have used it interchangeably in other recipes.

    Mmmmm, what a great way to enjoy carrots! It is quite a challenge to make a separate dish out of carrots but you’ve done a fantastic job! These carrot fries look so delicious!
