This beet, jicama and avocado salad is so easy to make, yet it looks so pretty! So, if you want to impress some dinner guests this would be a great starter. The ingredients are simple and healthy! This recipe serves two people.
Beet, Jicama and Avocado Salad:
3 small/medium beets
1/2 large jicama
handful of arugula
Balsamic Lemon Ginger Dressing:
1/4 cup olive oil
1/8 cup balsamic vinegar
1 tsp ground ginger
juice of half a lemon
1 tsp salt
1 tsp pepper
1. First, peel beets and cut them into small pieces. Steam the beets until you can peirce them with a fork, but before they become mushy. When they are done remove them from the steamer and place on a plate and allow to cool.
2. Peel and cut jicama and avocado and add to a bowl. Once beets have cooled add them to the bowl.
3. Surround the jicama, avocado and beets with some arugala. For the dressing, combine ingredients in a small jar and shake to mix. Then, drizzle the salad with dressing and salt and pepper if desired.
