I was inspired to make this thousand island dressing by the sauce that usually goes on “cheesy” kale chips. It’s usually some combination of bell pepper and soaked cashews. I made these kind of kale chips myself recently and the “cheese” sauce that you put on them was so good I almost didn’t want to put it on the kale chips!
So, I made up a batch of this sauce with a few changes so I can use it as a delicious salad dressing. It’s similar in texture to thousand island dressing although I don’t know if it necessarily tastes that much like it (to be honest I haven’t had thousand island dressing in a very long time).
1. To soak cashews put in a bowl and cover completely with water and mix in a tablespoon of sea salt. let soak for at least 2 hours.
2. In a food processor (I just got a new handy food processor that comes with a side scraper, so you don’t have to open it up to scrape down the sides and it’s awesome! You can check it out here.) combine cashews with remaining ingredients and blend. Add more water if you want it to be more liquidy.
3. Store in a jar in the fridge.
