I use this garlic dijon vinaigrette dressing for plain salads and also as a dip. It’s so delicious on it’s own that just dipping a carrot in it brings that carrot to a whole new level! Since it is blended together with a hand blender, the oil and vinegar don’t separate. I know it seems like a simple recipe, but it is really delicious. My boyfriend even said it was the best thing he’s ever had. I don’t know if it’s the best dressing in the world, but he is not easy to please, so that’s telling you something!
The above picture is the vinaigrette on a small salad of fermented carrots and purple sauerkraut.
Garlic Dijon Vinaigrette:
Supplies you will need: Hand blender (if you don’t have a hand blender you should get one! I just got one for making soups, but it has come in handy for so many other things like smoothies, mixing batter and salsa. I love it! They can be pretty inexpensive too! Check out this one.)
1/2 cup olive oil (where to buy real olive oil)
1/2 cup balsamic vinegar
2-4 cloves garlic (depending on how garlicky/spicy you want it)
1.5 tsp dijon mustard
Salt and pepper to taste
1. Finely chop the garlic. Combine all ingredients in container like a jar or drinking glass.
2. Use the hand blender to blend all ingredients together. The oil and vinegar will emulsify and come together to create a thick, rich and creamy salad dressing.
