This grain-free chocolate cake is a tasty, fluffy and chocolatey delight! It goes great with vanilla ice cream or a dairy-free ice cream. The cake itself is not too complicated and makes a great dessert for dinner guests.
Grain-free chocolate cake:
1/2 cup almond flour (how to make your own almond flour)
1/2 cup cocoa powder
2 tbsp coconut flour (where to buy coconut flour)
1/2 cup + 2 tbsp coconut sugar
1/4 tsp salt
1 tsp baking powder
1/2 tsp vanilla
1/4 cup milk or coconut milk (where to buy BPA free coconut milk)
3 pastured eggs separated
1/4 tsp apple cider vinegar
1 tbsp butter or coconut oil (where to buy coconut oil)- to grease the pan
1. Pre-heat oven to 350°. Combine all ingredients except for the 3 egg whites. Put egg whites in a separate bowl. Mix other ingredients in a food processor or with a mixer.
2. With a hand mixer, beat egg whites until stiff peaks form. In a bowl gently fold in egg whites to incorporate into the batter.
3. Use butter or coconut oil to grease a standard sized loaf pan (The finished cake will not rise to the top of the loaf pan, if you use a smaller loaf pan it might fit and slightly puff up over the top while baking). Bake for 15-20 or until a toothpick inserted in the middle comes out clean.
