These peppermint patties were so good it was hard to eat just one! These are a fun candy to make for special occasions or holidays, but they should be kept cool in the fridge or freezer.
Peppermint Patties (Naturally sweetened):
Makes 15-20 patties
*to powder the coconut sugar, simply grind in a small coffee grinder like this one.
1. Combine cream cheese, powdered coconut sugar, peppermint extract and coconut flour and mix well (I used a hand blender, but you could mix in a food processor or mix by hand).
2. Next, you will have to form the cream cheese mixture into patties. This is easier to do if it is a little harder. You can let the batter sit in the fridge or freezer for while to harden, but you can also form patties first and then refrigerate. Once you form all the patties let sit in the freezer to harden for 30 minutes.
3. In a double boiler melt the chocolate and mix with coconut sugar. Dip each patty into the chocolate to coat it, then put it on a sheet lined with wax paper. Freeze about 30 minutes to harden.
