These stuffed dates blew me away! I really wasn’t expecting much because it seems like sort of a simple dish, but the super sweet dates paired with the creamy rich goat cheese topped with the fresh tang of the lemon rind makes an excellent combination. The contrasting elements of each ingredient bring out the unique flavors.
Not only are these delicious, but they are really easy to make and look sort of fancy, so they make a great appetizer for a dinner party or potluck!
You don’t really need measurements in this recipe because it’s tailored to your preference. If you want to make 5 dates, then use 5 dates and use as much goat cheese as is necessary to fill the dates. Then, add as much lemon rind as you want!
Goat Cheese Stuffed Dates with Grated Lemon Rind:
- Goat cheese
- 1 lemon to grate
1. Cut a slit lengthwise down the dates and remove the pits, leaving a basin to put the goat cheese.
2. Using a knife fill the dates with goat cheese.
3. Using a fine grater, grate the lemon rind over the goat cheese stuffed dates.
