Luckily, where I live we’ve been visited by a few warm days after a long cold streak. This sweet peppermint lemon ginger drink is so refreshing on a warm day. The kick of the ginger paired with the honey sweetness makes for a satisfying combination. I often make this as a hot tea when I’m feeling sick, but it’s great to have a cold option if you want to easily put it in a bottle and take it to go!
This is so easy to make and will keep for a while in the fridge. It’s also a great flavorful alternative to soda.

Sweet Peppermint Ginger Lemon Drink:
Ginger (a few pieces)
1 tsp loose leaf peppermint tea or 1 tea bag
Juice of 1/2 lemon
1 tbsp. honey
water (about 5 cups)
1. Boil 5 cups of water.
2.. Cut skin off of the ginger, chop into pieces and put into a tea pot or heat safe container. Put peppermint tea into tea pot.
3. Pour water over ginger and peppermint and let steep for 10 minutes. Then squeeze lemon juice into the tea pot and add 1 tbsp of honey.
4. At this point you can taste it and see if the flavor is to your liking. If so, you can strain out the ginger and peppermint and then let it cool. However, I like to just let mine steep all day until it’s cool then I pour it out of the tea pot into a bottle and keep it in the fridge. If it’s steeping all day, the ginger flavor really comes out (which I love), but some people may find it to be too strong, so it’s up to you!
