One of my favorite things about fall is delicious fall food like pumpkin. Although some people argue that the tendency to have “pumpkin flavored everything” during fall has gone overboard, I say bring on the pumpkin!! That’s why I’ve created this healthy pumpkin spice latte, you can make it vegan or use grassfed milk.
The pumpkin spice latte is one of my favorites, but unfortunately, the ones you get at cafes are usually pumped with tons of processed sugar, additives and fillers. Luckily, with the right equipment, making your own dairy-free latte at home can be pretty easy!
Vegan Pumpkin Spice Latte:
1.5 tbsp pumpkin puree
1 tsp pumpkin pie spice (non irradiated, like this one)
1 tsp maple syrup, coconut sugar or honey
1/2 cup full fat coconut milk (like this one), this will also work with regular milk
1 shot espresso (about 1/8 cup)
1. To make espresso at home you can get a big expensive espresso maker (which I do not have) or you can get a stovetop espresso maker like this one. If you don’t often make espresso or don’t have an espresso maker you can always substitute the espresso for some very strong coffee. For this recipe I used a stovetop espresso maker and some Organic Coast Roast Coffee brand espresso which happens to be my Aunt’s local coffee company! It’s very delicious coffee by the way!
2. Once the espresso is done brewing, pour 1 shot of espresso into a mug and add the pumpkin puree, pumpkin pie spice, and sweetener. Stir well. You can use the milk frother to make sure you blend up the pumpkin puree enough so there’s no chunks. Since this recipe includes pumpkin puree it can be quite thick, so if you want to thin it out a bit, add a little water or more espresso if you want it to be stronger.
3. To prepare the coconut milk, put 1/2 cup coconut milk in a saucepan or pot over medium heat. Turn on the heat to medium and continue to stir. To create that lovely foam, you will need a milk frother which is another fun and inexpensive kitchen gadget to have. Once the milk is warm begin to froth it with the milk frother. After a few minutes it will create fluffy latte foam. Turn off the heat.
4. From the saucepan, pour the coconut milk into the mug, but leave a little bit of room so you can spoon some foam onto the top. Sprinkle with a little bit of cinnamon on top and enjoy!
