French onion soup is amazing simply for the sheer fact that someone who doesn’t like onions, more often than not, likes French Onion Soup. The caramelized onions make it such a rich dish it’s hard to pass up. (Okay the melted cheese can be a big deciding factor too!)
I wanted to create a French onion soup, but I really wanted to use my homemade vegetable stock for a base, so I thought why not change it up and see what happens. Well I loved it. It had an almost earthy flavor to it. You could really taste the vegetable stock in this recipe, which is perfect for my vegetarian fans!
Vegetarian French Onion Soup:
Makes 2 individual servings
Begin by putting the coconut oil and onions in a frying pan and sauté for about 15-20 mins. Once the onions are nice and tender move them into oven safe individual serving dishes (Like the ones here) Pour the vegetable stock over top of the onions. Rip French bread into small pieces, place in bowl top with grated cheese and place in a 350° oven for about 15 mins.
