This caramelized apple cashew mousse recipe is such a rich, delicious and healthy dessert. It’s paleo and vegan which means it’s free of dairy, gluten and grains!
Every once in a while I find myself craving something sweet. And I usually have only one thing in mind: cashews. These nuts are extremely versatile, they can be combined with a lot of fruits to create soft mousses and you can even use them for savory dishes or salty dips.
Of all the dishes I’ve made using cashews, I definitely prefer mousse. It is so easy to prepare. You can top it with any fresh or dried fruits you have in mind, and in a few minutes you’ll have a healthy dessert to enjoy without having to think about refined sugar, refined flours or other unhealthy ingredients.
You don’t have to worry if you don’t have a high-speed blender or if it broke (like mine just did!). If you soak the cashews and add enough liquid, you’ll get a smooth and delicious mousse. And what could be more appropriate as a fall topping than caramelized apples?
Healthy Caramelized Apple Cashew Mousse Recipe (Paleo & Vegan):

- 1 cup cashews
- 1/2 cup almond milk
- juice of 1 lemon
- 2 tablespoons honey (sub coconut nectar or maple syrup for vegan)
- 2 apples
- 2 tablespoons butter (sub coconut oil for vegan)
- 2 tablespoons coconut sugar
- 1 teaspoon cinnamon

Place the cashews in a bowl, cover with water and set aside for at least 2 hours.

Remove the water, and transfer the nuts to a blender.

Add the almond milk, lemon juice and honey. Process until soft and smooth.

Cut the apples into small slices. Melt the butter in a skillet. Add the apples and cook for about 2-3 minutes.

Sprinkle the sugar, and stir to coat the apple slices.

Cook for 3-4 minutes more until the sugar dissolves, stirring once. Remove the skillet from the stove and set aside to cool.

Divide the mousse between serving cups, top with caramelized apples, and sprinkle with cinnamon to serve.

This recipe looks wonderful! I’m just wondering why there’s butter, but then claims to be dairy-free and vegan; it’s neither with the butter included. I hope I can find a substitute that will fit, but won’t taste funny.
You can substitute coconut oil for butter. I added that as a substitution on the recipe.
