Ok, ok, so this is not technically ice-cream. The texture is a little bit different, but in my opinion, if you don’t have an ice cream-maker and want a creamy cool treat, this chocolate coffee dairy-free coffee ice cream is the best way to go. It’s so easy too!

Top Tip For Making This Chocolate Coffee Dairy Free Ice Cream
You need a powerful kitchen tool to make this ice cream such as an immersion blender or food processor. A regular whisk or fork will not work so keep that in mind.

- 16 oz. full fat coconut milk
- 2 tbsp raw honey
- 1/2 tsp vanilla
- 1/4 tsp sea salt
- 3 tbsp finely ground coffee
- 3 tbsp cacao powder I use raw cacao instead of cocoa for the health benefits. You can use either

Combine ingredients in a wide mouth jar or a large bowl. Make sure you use full-fat coconut milk like this or this. If you use light coconut milk or watered down coconut milk that comes in soy-milk style boxes it won't solidify properly.

Mix with a hand blender, hand mixer or blender/food processor (I used a hand blender because it's so compact and easy to clean up). This step is important because you need something powerful to really mix everything together…just a regular whisk or a mixing spoon will not work.

Make sure you use fresh coffee grounds, not ones that you've already used (those won't have any coffee flavor left in them!). If you just want chocolate flavor, leave out the coffee grounds and add in an extra 1-2 tbsp of cacao powder.

Once everything is thoroughly mixed, place the mixture in a jar and keep it in the fridge overnight. In the morning the mixture will be solid and ready to eat!

just need to clarify.. do you put the ground coffee in? .. rather than brew some strong coffee from it and add in as liquid????
Yes, just put the ground coffee in, it adds the coffee flavor. You don’t want to put actual brewed coffee in because the extra water will made it icy and hard rather than creamy like ice cream.

Tried it. AH MAZE ING!! So rich and creamy and decadent…but healthy!! However, I found it to be more like mousse or pudding then ice cream. 🙂
What did I do wrong? I made my own coconut milk. Everything else was normal. I left it for half of yesterday and overnight. Just checked and it’s still runny as when I made it. It’s tastes yummy! Can you help?
I just made a batch but I only had coconut cream… added a little almond milk too to compensate for the thickness… hope I didn’t botch it! (but it will probably taste good even if I did…)
Would this still taste good if I omit the honey?
