Chocolate Cookies (Egg free & Paleo)

Paleo Chocolate Cookies Egg Free

These egg free chocolate cookies have a light and fluffy texture despite using no eggs at all! I use honey to sweeten so they have a nice light sweetness coupled with a cakey richness that makes for a delicious but nutritious treat!

Chocolate Cookies (Egg free & Paleo):

Makes 10-12 cookies

1/4 cup cacao powder or cocoa
1/2 cup blanched almond flour
1/4 cup coconut flour
2 tbsp tapioca flour
1/2 tsp baking soda
1/4 cup honey
3 tbsp ground golden flax in 3 tbsp warm water*
1/4 tsp apple cider vinegar
1/2 tsp vanilla extract 
1/4 cup palm shortening
1/4 tsp sea salt
1/4 cup apple sauce

*To grind the flax seeds, run them in a coffee grinder.

1. Pre heat the oven to 350°. In a small separate bowl, place 3 tablespoons of ground golden flax seeds and add 2 tablespoons of warm water. Mix with a spoon and let it sit for a couple minutes until it gels.

2. Place all ingredients in a food processor including the gelled flax seed/water mixture and mix. The resulting batter will be thick–this is normal for grain-free cookies that have no eggs, do not add more moisture or the recipe may not turn out.

3. On a cookie sheet lined with parchment paper, form small cookies from the batter. Shape the cookies exactly how you want them to turn out since they wont change shape very much at all while cooking– they will rise slightly, but that’s about it.

4. Bake the cookies at 350° for 10-15 minutes or until the cookies are somewhat firm. Let the cookies cool for a few minutes after removing them from the oven or else they may crumble slightly.
