Dairy-free Better Than Thousand Island Dressing!

An easy and delicious dairy free salad dressing that's better than Thousand Island dressing plus it's so much healthier! It's thick, creamy and so delicious it's hard not to eat it by the spoonful.

An easy and delicious dairy free salad dressing that’s better than Thousand Island dressing plus it’s so much healthier! It’s thick, creamy and so delicious it’s hard not to eat it by the spoonful. Great on salads or as a dip!

I was inspired to make this thousand island dressing by the sauce that usually goes on “cheesy” kale chips. It’s usually some combination of bell pepper and soaked cashews.

I made these kind of kale chips myself recently and the “cheese” sauce that you put on them was so good I almost didn’t want to put it on the kale chips!

So, I made up a batch of this sauce with a few changes so I can use it as a delicious salad dressing. It’s similar in texture to thousand island dressing although I don’t know if it necessarily tastes that much like it (to be honest I haven’t had thousand island dressing in a very long time).

What To Serve This Better Than Thousand Island Dressing With?

  • Spread on sandwiches
  • Serve as a dip with chips or veggies
  • Have with salad
  • Drizzle of potato wedges or your favorite roasted vegetables

Ingredients
  • 1 cup soaked raw cashews
  • 1 red bell pepper
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp water
  • 1/2 tsp salt & pepper
  • 1/4 tsp turmeric
  • 1/4 tsp garlic powder
Instructions
  1. To soak cashews put in a bowl and cover completely with water and mix in a tablespoon of sea salt. let soak for at least 2 hours.
  2. In a food processor combine cashews with remaining ingredients and blend. Add more water if you want it to be more liquidy.

  3. Store in a jar in the fridge.
