Homemade Cupcakes for your Dog (and humans too!)

In honor of my little doggy’s 1st birthday, I decided to make her something special! Mini cupcakes with suitable ingredients for dogs (and humans).

Meet Lentil!

She’s a 1 year old jack russell terrier mix that we got from a rescue organization called Rocket Dog Rescue. Yes, she is named after the legume…because she’s like a little bean!

Lentil was a big fan of these cupcakes and hopefully your pooch will be too!

Dog Cupcakes:

1 ripe banana
1/4 tsp baking soda
1 tbsp coconut milk
1 tbsp coconut flour
1 egg
1/2 tsp cinnamon
1/4 tsp apple cider vinegar
1 1/2 tbsp ground flax

 

Frosting:
1 sweet potato
3 tbsp full fat coconut milk
1 1/2 tbsp peanut butter
shredded coconut (optional)

 

1.Peel the skin off of the sweet potato and cut into cubes. Steam the sweet potato until very soft. Remove from steamer, put into a bowl and mash until smooth. Add the coconut milk and peanut butter and mix until it is a smooth puree. Set aside to cool.

2. In a bowl mash the banana into a smooth puree. Then, combine remaining ingredients and mix well.

 

3. Using a mini muffin tin with mini muffin cups pour the batter to fill the cups 3/4 full. I use silicone mini muffin liners and it makes it a lot easier. You can wash and reuse them and they make it easy to get the muffins out of the liner.
4. Bake at 350° for 15-25 minutes or until a toothpick stuck through comes out clean. Set the muffins aside to cool.

 

5. Once the frosting and muffins are cool you can either use a pastry bag to pipe on the frosting or you can spoon it on. If the frosting is too thick you can add a little more coconut milk. Once you’ve frosted the cupcakes you can sprinkle a little shredded coconut on top and you’re done. Enjoy these cupcakes with your furry friend!

    Happy Birthday to Lentil! She is so cute and I love her name!
    We have a 5 year old Golden Retriever, a 4 year old cat, a 16 year old cat, 2 bugies, 2 gerbils and 2 hamsters. All of them do hilarious things but I love how our one budgie likes to hover in our dogs face and the dog is terrified of her and she ways 75 pounds!
    Thanks for sharing this recipe! I can’t wait to try it out on our dog 🙂
