This paleo chocolate whoopie pie recipe will be the perfect dessert for anyone following a gluten free diet. The fluffy rich cookie paired with the sweet creamy filling is sure to hit the spot!
Preheat the oven to 350F. Line a baking tray with parchment paper.
In a large bowl, sift the coconut flour and cocoa powder.
Add the butter, honey and lemon zest.
Mix for 5 minutes until the dough is sticky and creamy.
Wet your hands and scoop out 1 teaspoon of dough at a time. Roll between your hands and flatten to get a cookie. Repeat for the remaining dough.
Bake for 10 minutes.
Remove from the oven and let cool completely before handling the cookies.
