Chocolate Chip Protein Energy Balls (Paleo, Keto, Sugar Free)
These no-bake chocolate chip protein energy balls are little sweet chewy bites of paleo chocolatey goodness...almost like eating cookie dough! They are also quick and easy to make and suitable for paleo, keto and sugar free diets.

In a bowl mix together the collagen protein, coconut flour and almond flour. Then add the nut butter, stevia, applesauce and vanilla then mix together.
The texture should be like thick cookie dough. Fold in the chocolate chips. Take small bits of the mixture to roll into balls. Enjoy right away or store for later in the refrigerator.

The texture should be like thick cookie dough. Texture may vary depending on the nut butter that you use. If the dough is too wet, add in more almond flour, 1 tbsp at a time, until you reach the desired texture. If it's too dry, add 1 tbsp of applesauce at a time until you reach desired consistency
I used stevia for the sweetener to keep it low carb, but if you prefer a little more sweetness you can add some honey. I recommend adding one tablespoon of honey and one extra tablespoon of almond flour to make up for the extra moisture. Taste that and if you still want it to be sweeter add another 1 or 2 tablespoons of honey along with the extra corresponding almond flour to achieve the right texture.
Keep these energy balls in a sealed container in the fridge. They will last 1-2 weeks in the refrigerator or a month or more in the freezer.
I find that cashew butter gives these energy balls the best flavor!
