All kids just love whoopie pies, right? Needless to say, the ones you find in stores contain a lot of processed and unhealthy ingredients. My daughter tried these cookies twice and each time she felt sick afterwards. So I had to use my imagination and the internet to create a chocolate whoopie pie recipe that is still delicious but also healthy and made only with natural ingredients.
This recipe is very easy to make and doesn’t require many ingredients. This recipe will make about 24 cookies, meaning 12 sandwiches. At the beginning I was thinking that I would only make half this amount, but then decided against it and I’m glad I did! In the end, I only got the chance to taste one whoopie pie before they were all gone!
Here are a few tips when making this whoopie pie recipe: when making the dough, be sure to mix for about 5 minutes because the ingredients need time to set. Wet your hands when you mold the cookies otherwise most of the dough will get stuck on your fingers. If the dough is too sticky, just place it in the fridge for 15 minutes so you can work with it.

Chocolate Whoopie Pie Recipe (Paleo & Gluten Free):
This paleo chocolate whoopie pie recipe will be the perfect dessert for anyone following a gluten free diet. The fluffy rich cookie paired with the sweet creamy filling is sure to hit the spot!
- 1/2 cup coconut flour
- 12 tbsp butter or ghee softened a bit
- 1/2 cup cocoa or carob powder
- 2 tsp organic lemon zest
- 6 tbsp raw honey
- 1 cup coconut cream
- 1 tsp vanilla extract
- 2 tsp raw honey

Preheat the oven to 350F. Line a baking tray with parchment paper.

In a large bowl, sift the coconut flour and cocoa powder.

Add the butter, honey and lemon zest.

Mix for 5 minutes until the dough is sticky and creamy.

Wet your hands and scoop out 1 teaspoon of dough at a time. Roll between your hands and flatten to get a cookie. Repeat for the remaining dough.

Bake for 10 minutes.

Remove from the oven and let cool completely before handling the cookies.

Mix together all the ingredients.

Spread the filling on 12 cookies, and place the other 12 on top to create sandwiches.
