    About a year ago my father in law got diagnosed with cancer. He went on a raw vegan and no grain or sugar diet.
    I didn’t want him to feel left out at gatherings. This was a huge hit! Easy to make and yummy. I was so happy to find a recipe he could enjoy!

    Made this dessert for a dinner party where some people don’t eat gluten, dairy or sugar and it covered all the bases! I used almond flour in the crust, which I baked, coconut cream for the filling, and topped it with blueberries, raspberries, blackberries and kiwi. I was apprehensive about the coconut cream being firm enough, but I refrigerated it for a few hours, as well as the bowl and mixing blades and it turned out fine! It was a big hit with everyone, including me. I don’t have any dietary restrictions but I would make this simple, summer dessert again.
