No Bake Paleo Cookie Balls

I love having these easy paleo cookie balls with tea! They are a nice sweet treat to have without all the processed sugars and flours. They are also great if you are sensitive to eggs or vegan and gluten-free.

  1. Grind the flax seeds by blending them in a coffee grinder.

  2. In a small separate bowl, mix the ground flax seeds and warm water. Allow to sit until it gels.
  3. Mix dry ingredients together in a food processor or mixing bowl. Add wet ingredients, including flax mixture and mix well. The result will be a thick crumbly dough-like consistency. If the dough is too crumbly to form into balls add another tbsp on honey.
  4. Roll portions of the dough into balls and they're ready to eat!
  5. Store extras in the refrigerator.
